Salt is an award winning restaurant in Stratford Upon Avon, owned by Paul Foster. Opened in 2017, it has already received rave reviews, including being named as Best New Entry in 2017’s prestigious Good Food Guide.
Paul selected Husky commercial refrigeration products for Salt and has been extremely impressed. He explains “Reputations are built on high quality and consistent service. The quality of service from Husky during the consultation, order and product delivery was first class and I am reassured by the reliable after care service.”
Husky is proud to play its part in the restaurant’s name with a Husky C5PRO Glass Door Fridge, packed with blocks of pink Himalayan salt in the restaurant store room. Paul uses this to assist with meat curing. “All meats age differently: sides of beef need longer than pork for the flavours to concentrate whereas duck might just need a few days – the C5PRO’s larger capacity and fan-assisted cooling allows us to do them all without needing to think about the running cost”.
“Salt has 40 covers, but we purposefully designed the dining room with an open pass so it feels more like a chef’s table.” explains Paul. “We can really concentrate on providing a personal service and our compact size allows us to create dishes using ingredients that might only be available in very small quantities including Porthilly Rock Oysters”.
Storing fresh, often delicate, ingredients and sensitive produce, such as seafood in hot kitchens, demands resilient and dependable refrigeration.
Salt’s kitchen is equipped with Husky Stainless Steel Catering Refrigerators and Freezers. Front of house features the best-selling Husky C2 Undercounter Bar Fridge.
Serge Kremer, CEO at Husky Commercial said: “We are thrilled that Salt is already proving to be a success and have enjoyed being involved in this exciting and innovative project with Paul. At Husky we are passionate about helping up and coming chefs. We do this by providing them with the best, reliable and high quality refrigeration equipment and aftercare service, yet at an affordable cost which is so important for any business start up.”
